I tend to scramble my eggs, largely because they're pretty much universally popular (usually make 'em for more than just me), and it's super duper easy. And I like 'em!
I love scrambled eggs and they are great when you're feeding a crowd. They are one of those simple dishes that chefs get fairly particular about when you get into more upscale dining.
Hollandaise sauce is something that came fairly easily to me, I've always enjoyed making it but there is a lot that can go wrong. Making it in a blender is a whole lot easier than the double boiler method though.
We had a bur mixer, and it certainly made it a lot easier than a wire whip! but yeah, you really have to pay attention (or at least I definitely did). After seeing it go wrong in the past, and that leading to Bennies not being available for the open (catastrophe), I was probably paranoid in retrospect.
I agree. Eggs are extremely valuable and useful. One season, I crushed up my egg shells and placed them around my plants to prevent slugs from eating the leaves. It seemed fairly effective.

Poaching eggs on Sundays was definitely an art that had to be mastered! I got plenty of practice on days like Mother's Day.
