Brian, do you ever watch "Somebody Feed Phil"? For whatever reason, all this talk of authentic Mexican cuisine conjured up a few episodes of that show. I really enjoyed watching that one with the family.
Mexican food is one of my favorites as well. I never really stopped to think how it has blended into our daily food culture on so many levels. Yay Margaritas! Thanks for sharing.
Truly agree with the sentiment behind this! It was shocking to me in the late 70's that I couldn't find any Mexican cuisine in NYC Times Square vicinity (not even a Taco Bell) and on the West Coast my first kitchen job in the early 80's was in a restaurant serving Mexican cuisine. I value that experience and still make Carnitas based on the method learned there, it is my all time favorite!
